My favorite use on all the green tomatoes I got from my garden at the end of the season is this Green Tomato Jam With Ginger. Ginger is one of my favorite flavors and it works perfect with the green tomatoes. The only change I made to the recipe was to add in fresh ground black pepper. The simmer jam just to be calling out for it to make it a bit more savory.
The jam is really delicious, not too sweet with a little zing from the ginger. It is great for breakfast in Greek yogurt or on toast. As appetizer it would be delicious on a block of cream cheese or on a cheese plate.
