Yes I am STILL obsessing about the salsa and I decided to make it into a meal before I run through my supply.
|Pumpkin and Black Bean Soup||
- 1 jar Salsa
- 2 cups water
- 1 can black beans, drained and rinsed
- 1 can pumpkin
- 1 – 2 t. chipotle
- 1/2 – 1 t red curry powder
- Pour it all in a pot and heat. Adjust heat of spices to your taste.
Voila, salsa soup! Doesn’t get much easier. Tasty too, though truth be told I could just pour the pumpkin chipotle salsa in a bowl and eat it with a spoon. Use any salsa, though a chipotle variety works best with the pumpkin in my opinion. Canned pumpkin is great lo-cal way to sneak in some fiber and vitamin A. Remember how mom told you to eat carrots to keep from getting glasses, that is the vitamin A. It’s also great for your skin, bone and hair health. More good reasons to love the salsa!
