Caprese Omelette

Vine ripe tomatoes, fresh picked basil —  Summer eating doesn’t get better.  Love the linger of the basil on your hands after you’ve picked it, the scent is so strongly associated to summer for me it just brings a rush of happiness.    Add fresh mozzarella and those vine ripe tomatoes I mentioned and I’m grinning ear to ear…

Sometimes the simple pleasures are just what is needed to feel a bit more grounded.

      After a fun but long day at the beach the last thing I wanted to do was make dinner. I had some fresh basil from my mom’s garden and after reading this in the car on the way home I was inspired. Perfect late night summer dinner!

      No cauliflower? I kid, I kid… These are actually Brian’s favorite flavors but I’ve never tried putting them in an omelet. Guess I will now…

      I wish I liked fresh sliced tomatoes, but I have to take all the seeds up and chop them up fine – but you really had me at the cheese! 😀

      Whenever I am outside watering my herbs I run my hands over at least one of my herbs, I just love the smell! That omelet sounds really good!
