I was on pie duty for Thanksgiving.  Backing is not my strong, but they turned out OK.  They are not the prettiest pies, but hey that just makes them look more rustic and authentically homemade.  The pies I made were Apple Pie, Pumpkin Ice Cream Pie, and  French Silk Pie (my favorite).  I followed all the recipes as they read, with the exception of the French Silk.  I used real eggs, and what is not clear in the instructions is that you need to beat the mix for about 5 minutes after the addition of each egg to achieve the proper silkiness.  Thanks goodness for the cleanup crew!
