Democracy In Action

Though I did vote today, I am actually referring to the weekly menu in our house.  The 10 year-old has requested tacos every Tuesday.  Taco Tuesday.  We’ve been doing this for about a month.  It is one night of the week where dinner is done in a snap, tacos couldn’t be easier.

Tonight we tried something new, pumpkin tacos.  Canned pumpkin alone is light on flavor so it easy sneak in a recipe.  It is low in calories, high in fiber, has very low sodium, and it is packed with vitamin A.  Best of all, it was a hit!

No real recipe, all I did was add a can of pumpkin to browned seasoned taco meat, used turkey this week.  Heat and eat!  The kids had the meat on tortillas with a side of corn and rice.  I ate mine over some leftover spaghetti squash with a pepper and onion from the farmer, and corn from the freezer all sauteed.  The corn was the Mirai corn from this summer, it defrosted so-so.  Sauteing it was definitely the way to go, the texture held up better than the kids nuked corn.  Both options tasted super sweet though.  Topped with some sweet heat treat and pumpkin chipotle salsa of course.

      What a great way to sneak in pumpkin! I added some pumpkin to a marinara sauce not too long ago – it didn't taste pumpkiny at all – just delicious!

      If it were up to me and my daughter, that's all we would have is taco nights!

      I had leftover chili in an acorn squash today for lunch – delicious!

      Oh my goodness, num, num, num. As I send Scott out for pizza while I continue working. . . .SO boring.Oh, and lazy, did I mention lazy?

      Biz, your chili in the acorn squash looked delicious. Good idea. I like using squash in place of rice or pasta.

      That’s pretty interesting. Does it kind of have the texture and look of refried beans added to the meat?

        Actually you hardly know it is there. Changes the color of the meat a bit, but not the texture. Similar to adding salsa.
