Monday Already?

I should feel refreshed after our low key weekend, but sadly that is not the case. The weekend kicked off with a happy hour to bid farewell to another friend at work, but I was home and in bed early. Saturday was an early morning. I did my first distribution shift at the food pantry which I had to cut short to get home to do some work. That wrapped up quickly so I had the afternoon to just chill. We had no plans for Saturday night so we made ourselves a nice home cooked meal.
My husband makes the best French onion soup. I did my best to supervise.frenchonionsoup

I was in charge of the steaks, not bad for an indoor steak on a cast iron pan we bought in the camping section at Sports Authority.

When I got the Pioneer Women cookbook for my birthday, I immediately bookmarked the Rib-Eye Steak with Whiskey Cream Sauce recipe. This was the perfect change to try the sauce out. It came together easily and tasted delicious! I made a few modifications to spice it up, it is a bit on the sweet side.
Whiskey and Cream Sauce
Adapted from The Pioneer Women
Makes 2 servings
5 tablespoons butter
3 tablespoons diced onion
1/4 cup whiskey
1/4 cup beef stock or broth
Dash of salt
Crushed black peppercorns (to taste)
1/4 cup light cream
  1. Sauté onion in 3 T. butter until lightly browned.
  2. Remove pan from heat and pour in Whiskey.
  3. Add back to heat and cook down a bit.
  4. Add stock and seasoning to taste, bring to a boil and reduce a bit further.
  5. Add remaining butter and melt, stir in cream. Bring to boil and reduce heat to medium low.
  6. Stir often and let thicken over low heat while you prepare steaks.
Such a great meal!  I think the sauce would be great on pork chops too.

Great evening too, we even managed to stay awake to finally watch The Social Network. Another great weekend. Let’s hope it is a great week too!

    I remember actually seeing it in the book when I looked at your copy last year. You warned me too stay away, that I would be addicted. I am!
