Your taco photo brought back a wonderful memory. Those tacos are exactly like the street vendor tacos we would gobble up at 2 in the morning after dancing the night away at the discoteca in Mexico where I was studying abroad. We nicknamed the vendor Pinky for some reason I can’t quite remember. He would set up shop in the afternoon and that meat would roast on an open spit all day. The tacos were so simple just the shaved meat, onions, cilantro and fresh squeezed lime juice all wrapped up in a homemade tortilla, but they were the best.
What a great memory, sounds similar to the those tacos for sure. They were the best tacos, the brisket was the best I have ever had.
Why have I never made brisket tacos?!! I am looking away from your onions though! Happy Hump Day!
