Summer Reading Update

Posted on June 29, 2010December 15, 2011 by Jacky Hackett

The weather in the evenings have been perfect for sitting on the front porch and reading.  My daughter and I have been trying to do this every night.  As part of the library reading challenge she needs to get in 30 minutes of reading each day.  As a result I am halfway through my summer…

{Check it Out} Eminem

Posted on June 28, 2010September 10, 2012 by Jacky Hackett

I am a huge fan of Eminem.  Perhaps you caught that in the title of my blog.  Watching the Real Slim Shady video it is hard to believe it is ten years-old, all the references are still relevant.  I have to admit I did not know he had a new album coming out until I…

Tough Decisions

Posted on June 25, 2010July 19, 2011 by Jacky Hackett

Everyone at one point in thier life is faced with making tough decision.  As a parent we try to shield our children from this until they are of the age to handle it.  However, sometimes life throws you a curve ball and you just have to make them face it.  Today was one of those…

Blowin’ in the Wind

Posted on June 18, 2010September 10, 2012 by Jacky Hackett

We got a bad storm in Chicago this afternoon.  The kids and I spent it on the front porch.  Something I always did as a kid, I love me them summer thunderstorms.  We were marveling at how the trees just sway in the wind rather than snapping in half.  Ours are so young they were…

Farmer’s Market with a CSA Chaser

Posted on June 17, 2010September 7, 2012 by Jacky Hackett

I finally got to a farmer’s market this season!  I was in search of radishes and possibly some garlic scapes.  There was not a ton of produce, most of the market was herbs, vegetable plants for the garden, and flowers.  Oh and of course baked goods.  What is it about farmer’s markets that they must…

Bahn mi. What did you call me?

Posted on June 17, 2010October 22, 2011 by Jacky Hackett

Before my encounter at the Chicago French Market I had never heard of bahn mi. A bahn mi is essentially a Vietnamese baguette, also referred to as the sandwich that is served on the baguette.  The sandwich typically includes pickled carrots, daikon, cucumbers, cilantro, chili peppers, spicy mayonnaise and a protein. Now, I crave them….

A Slice of Summer – Margarita Cake

Posted on June 13, 2010November 10, 2020 by Jacky Hackett

Bundt cakes are the ultimate in low maintenance cake making.  Especially when it involves using a cake mix.  There are countless ways to liven up a simple cake mix.  The Cake Mix Doctor is my go-to for ideas.  It has more than just Bundt cakes too.  Block party season is here and there is nothing…

Garden Growth

Posted on June 10, 2010September 7, 2012 by Jacky Hackett

I have been anxiously awaiting gardening season for awhile and I am so happy it is finally here.  The weather has been sunny and cool with a few good rain showers thrown in.  I’ll take it.  We expanded the garden a bit during the yard makeover, not a ton of room but any space helps. …

The Best Laid Plans…

Posted on June 9, 2010September 10, 2012 by Jacky Hackett

Yep, they went awry! All for the better though. School is out for the summer and we were looking forward to kicking the first weekend off with no plans. I always look forward to a weekend with nothing planned, they are so rare. My only goals for the weekend were to get in my training…
