Green Tomato Jam

Posted on October 16, 2010September 7, 2012 by Jacky Hackett

My favorite use on all the green tomatoes I got from my garden at the end of the season is this Green Tomato Jam With Ginger. Ginger is one of my favorite flavors and it works perfect with the green tomatoes. The only change I made to the recipe was to add in fresh ground…

Season’s End

Posted on October 15, 2010September 7, 2012 by Jacky Hackett

While the husband was in East Lansing celebrate the big win I spent the weekend in the kitchen.  Like all weekend.  Totally by choice though, I was really looking forward to it.  I wanted to get some of the end of the season goods canned and ready to enjoy come winter.  As planned I…

Fall Color Report

Posted on October 14, 2010September 6, 2012 by Jacky Hackett

The fall foliage in our yard this year is fabulous thanks to the landscaping project earlier this year…   A burning bush or two would be a great addition, I have a few location ideas. Looking forward to seeing what it all looks like come spring.

Learn Something New Everyday

Posted on October 8, 2010 by Jacky Hackett

When you plant sweet potato vine that it actually grows sweet potatoes?  Well I did not realize that until this year when the women at the nursery told me.  Pulling out the summer plants and replacing them with fall plants  in my front planters I did in fact find a few potatoes.  Can’t say I…

Check it Out – Green Tomatoes

Posted on October 7, 2010 by Jacky Hackett

My goal this weekend is to pull out the tomato plants from the garden.  If I put it off much longer I fear they will be covered in snow before I get around to doing it.  I found some great recipes to make use of the green tomatoes.  Depending on how many I end up…

Salsa Verde

Posted on September 21, 2010September 7, 2012 by Jacky Hackett

It feels good to get back in the kitchen!  I was inspired (and finally had time) to take a shot at canning after visiting my brother and sister-in-law’s house.  She had canned cases of fresh tomatoes, greens beans, and beets all that came straight from the farmer.  They sent us home with with one of…

Garden to Table

Posted on September 20, 2010September 7, 2012 by Jacky Hackett

Sunday, I picked all the leeks from the garden. Made this Potato Leek Soup with Poblanos and Crispy Bacon. For the kids, I skipped the poblano and added some shredded chicken. Made for a delicious dinner, very creamy and filing.  Which is good thing since I made a triple batch for freezing. Submitted to Life…

Looks Aren’t Eveything

Posted on August 27, 2010 by Jacky Hackett

These beasties are proof, beauty is skin deep.  These heirlooms may be ugly and cracked, but they are incredibly delicious.  At least one is ready for picking each day.  They are best enjoyed straight up.

Sweet Heat Treat

Posted on August 23, 2010September 7, 2012 by Jacky Hackett

While I was busy sunning myself on the shores of Lake Michigan, the garden was busy soaking up some sun itself. We came home to an abundance of all variety of tomatoes (finally!), red cabbage and salsa peppers. I’d been waiting to get a large amount of peppers ripe all at once so I could…
