Lasagna Tart

Lasagna Tart

Posted on November 8, 2011January 4, 2014 by Jacky Hackett

Friday’s kitchen time produced a delicious evening.  The spicy goat cheese was just the start.  A lasagna tart the finish.  Another simple dish that is full of flavor.  The recipe comes together quickly and definitely has weeknight potential.  Don’t let a homemade crust scare you off. Lemon zest in the crust adds an expected brightness…

Posted on November 7, 2011November 1, 2020 by Jacky Hackett

Daydream Believer

Posted on November 2, 2011December 15, 2011 by Jacky Hackett

This is as close to a Pina Coloda I am gonna get sitting at my desk. I’ll take it though, it adds the 4D element to my daydream… I guess it doesn’t take much when you sit in a 10×10 cubicle all day. Though a touch of rum after hours would be welcome.

October Race Report

Posted on October 25, 2011December 15, 2011 by Jacky Hackett

After such a rainy cold week I was glad this weekend was another beautiful weather weekend.  Good thing since I had the Frank Lloyd Wright 10K to run.  I’ve always loved this race, I prefer this distance and best of all it is in my town.  It has actually been over ten years since I…

Posted on October 20, 2011January 4, 2014 by Jacky Hackett

The warm summer days have become those rainy cold fall days, though we did get a nice final summer weekend to put it to rest.  The main season of our CSA deliveries have ended and the fall deliveries have begun.  Here are some of my favorites from the summer… Summer Squash “Lasagna”. This is an…

Posted on October 18, 2011January 11, 2013 by Jacky Hackett

October has been a busy month, and things are slowing down any time soon.  My kitchen has been especially busy the past week.  Thank goodness for Pinterest for keeping track of recipes.  With the iPad app it make them even more accessible in the kitchen. Here is some of what’s been cooking… Let’s start with…

WINNING!

Posted on October 17, 2011October 11, 2020 by Jacky Hackett

Saturday was the block’s annual Blocktoberfest, the weather was absolutely perfect.  Two constants at our block party are the tie-dye and the chili contest.  Both were stellar this year… The chili competition was tough this year, they were all so good it was hard to vote for only three.  I entered with Biz’s Best Buffalo…

Sweet Red Pepper Paste

Posted on October 6, 2011January 4, 2014 by Jacky Hackett

Just as all the sweet peppers from the CSA were taking over my vegetable drawer I got this recipe for Massa de Pimentão (Sweet Red Pepper Paste) in my email.  Isn’t the result wonderful looking… I mixed a few spoonfuls of the paste with grated cheese.  Fancy pimento cheese.  Spread it on bread and transformed…

Peanut Butter Bars

Posted on October 5, 2011November 10, 2020 by Jacky Hackett

More packages on the porch, always makes me happy.  This time it is peanut butter sent to me as part of the Foodbuzz Tastemaker program with National Peanut Board. I love being the first one to dip into a new jar of peanut butter.  We actually go through a lot of peanut butter in our…

Fried Green Tomatoes

Posted on October 4, 2011January 4, 2014 by Jacky Hackett

I pulled out the majority of our garden.  Always a sad day.  Overall the garden was not a huge success this year.  We did get some huge and delicious tomatoes, but we did not get a ton of them.  The cherry tomatoes were so small it made them a total hassle to pick and I…
