Summer Memories {Strawberry Rhubarb Crisp}

Posted on June 9, 2020June 9, 2020 by Jacky Hackett

It was a blink of en eye from the shelter in place order to the end of the school year, summer kick-off, and throw in throw in racial injustice that has brought us to another tipping point. The images, stories, resources are flooding our social media streams. While necessary, can be overwhelming. Hope everyone is…

Don’t Judge A Book By It’s Cover {Lemon Basil Olive Oil Cake}

“You are running the New York City marathon.”  That is the Most common response when I tell people I am running the NYC marathon.  They have the facial expression to go with it too, their eyes go wide as they say “you”.  Sure I don’t look like your average runner, nonetheless marathon participant.  Sure, I…

Frozen Dinner {Eggplant Parmesan Pizza}

Posted on September 14, 2012January 3, 2014 by Jacky Hackett

In my never-ending battle with freezer space, I threw together a few meals this week from freezer finds.  I found last summer’s tomato sauce and eggplant Parmesan.  Combined with leftover fresh mozzarella on whole wheat naan, it was pizza time! I re-crisped the eggplant in a skillet with a little oil.  Added some slice of…

Tomato and Basil {White Bean Basil Spread}

Posted on August 28, 2012January 3, 2014 by Jacky Hackett

Plenty of tomatoes and basil to enjoy this week thanks to the CSA.  Layers of tomatoes, basil, finely shredded Swiss, salt, pepper, and a little drizzle of olive oil were packed into a pie crust for a very rich and incredibly filling dinner. Didn’t make a dent in the basil.  I still have plenty of…

Baked Squash Blossoms

Posted on August 21, 2012April 8, 2014 by Jacky Hackett

The CSA box this week included squash blossoms.  They are gorgeous, amazing color. I have never cooked or even eaten squash blossoms so I was pretty excited to have them in the delivery. I have most commonly seen squash blossoms stuffed, battered, and deep fried.  I decided to go that route minus the deep fry. …

Eggplant, Zucchini and Tomato Casserole

Meatless Monday {Eggplant, Zucchini and Tomato Casserole}

Posted on August 6, 2012January 3, 2014 by Jacky Hackett

Pre-vacation eating can get interesting.  Our fridge was just about bare, with the exception of all the goodies from the CSA.  Hate to waste hard grown food.  Layered them all in a casserole, added in some feta, topped it some Parmesan and crunchy onions (of the green bean casserole fame)  and baked for about 20…

Lemon Basil Shortbread

Posted on July 26, 2012April 8, 2014 by Jacky Hackett

Not much to say on this one.  I am loving the lemon basil from this week’s CSA basket, a bright version of my favorite herb.   It’s nice match for buttery shortbread for an easy summer dessert. Lemon Basil Shortbread Recipe Type: Dessert Prep time: 10 mins Cook time: 20 mins Total time: 30 mins…

Arugula Almond Pesto

Posted on July 24, 2012April 8, 2014 by Jacky Hackett

The past few summers we have been members of a community supported agriculture (CSA) and have loved getting our vegetables that way.  The first one we belonged to stop servicing our area after two summers we tried a new one last summer.  The one we used last summer delivered huge quantities, which is great but…

Roast a Rainbow

Posted on November 17, 2011January 4, 2014 by Jacky Hackett

Still facing a fridge of leftovers.  Unrelated, my camera is on the fritz.  Likely I changed some setting that resulted in crappy pictures.  Maybe I need a new camera.  Likely I just want a new camera. Back to leftovers.  The bottom portion of our fridge is jam backed with CSA vegetables that I need to…

In the Box — CSA Week 24 {Summer Recap}

Posted on October 20, 2011January 4, 2014 by Jacky Hackett

The warm summer days have become those rainy cold fall days, though we did get a nice final summer weekend to put it to rest.  The main season of our CSA deliveries have ended and the fall deliveries have begun.  Here are some of my favorites from the summer… Summer Squash “Lasagna”. This is an…
