Almond Butter

I’ve declared my love for peanut butter, what I didn’t mention is peanut butter doesn’t reciprocate those feelings.  Not one single bit.  It gives me the worst heartburn.  Especially if I eat it before running.  Bananas do the same thing to me.  Peanut butter and banana sandwiches used to be my go to breakfast before long runs.  Anyway, this problem hasn’t diminished my feelings for peanut butter but I have learned to move on (for the most part).  In comes almond butter…

For whatever reason almond butter doesn’t give me heartburn.  The kids love almond butter too so it is all good.  They especially love honey almond butter.  I am not such a huge fan of honey so I decided to try almond butter with coconut butter added.

almond butter roastingI woke up the almond flavor first up by roasting them in a pan.  Then into the food processor they go.

Almond and Coconut Double Butter
Recipe Type: Nut Butter
Prep time: 5 mins
Cook time: 5 mins
Total time: 10 mins
Serves: 8
Ingredients
  • 1 cup, raw unsalted almonds
  • 3 T. coconut butter
  • 1 t. cinnamon
  • pinch of salt
Instructions
  1. Roast almonds in a pan for about 5 minutes.
  2. In a food processor, whir the almonds until them become spread like. Scrap sides as needed.
  3. After about 5 minutes add the coconut butter, cinnamon, and salt.
  4. Process until smooth.

Almond butter is a delicious substitute for peanut butter.  Nut butters in general are so easy to make in a food processor.  Versatile too, add-ins are endless; white chocolate, dark chocolate, honey, whatever floats your boat.

almond butterThis spread makes for a simple breakfast on toast.  Or add a spoonful into your oatmeal or breakfast smoothie.  Love it, glad it feels the same about me.

    That all floats my boat. I can’t imagine life without nut butters. I just bought a huge bag of almonds from Costco. I’m finally going to try to make my own almond butter. Yours looks delicious.

    I’m so sorry to hear about the PB and banana heartburn. That is my long run snack too. It sounds like it wasn’t always an issue for you. What do eat now before a long run?

      I am still in search of a routine meal before a long run. Trying out some options like plain old turkey or eggs, this almond butter. Need to find something that works. Any suggestions?

        Lately I’ve been eating a date or 2 before my shorter runs (5-8 miles). I’ve had dates or an apple with almond butter before a few of my long runs and that worked out just as well as the banana and peanut butter.

        Yogurt or string cheese are other possibilities if you can do dairy before a run. I like something a little sweeter. I think that’s why I always go for the nut butter.

        Another idea might be a homemade granola bar or fig bar. Let me know what you find that works for you.

    Peanut peanut butter and jelly is my fave pre-run fuel (especially on toasted bread!). I’ve never tried using coconut butter or oil in any recipes, but I just bought some so that I could make my own granola. This recipe is going on the list as well. I’m a huge fan of almond butter (Especially Trader Joe’s w/sea salt), and I bet that the addition of coconut flavor to the almonds will be irresistible. Thanks for sharing.

      I must get to TJs tomorrow to get that almond butter with sea salt. Yummm!

    I’ve never thought of making my own nut butter – love that you toasted the almonds!
    My sister said she saw you at the carnival today – the birthday party we did tonight was a huge success! 😀

    TJ’s Almond Butter with sea salt is my go to. If you do go to String Cheese, go for TJ’s as well, that is by far the best one we have ever had. We were just there today and picked up a couple. I need to try making this, I wonder what it would be like with pecans, I have a huge bag from costco.
