I’ve declared my love for peanut butter, what I didn’t mention is peanut butter doesn’t reciprocate those feelings. Not one single bit. It gives me the worst heartburn. Especially if I eat it before running. Bananas do the same thing to me. Peanut butter and banana sandwiches used to be my go to breakfast before long runs. For whatever reason almond butter doesn’t give me heartburn. The kids love almond butter too so it is all good. They especially love honey almond butter. I am not such a huge fan of honey so I decided to try almond butter with coconut butter added.
|Almond and Cocunut Double Butter|
- 1 cup, raw unsalted almonds
- 3 T. coconut butter
- 1 t. cinnamon
- pinch of salt
- Roast almonds in a pan for about 5 minutes.
- In a food processor, whir the almonds until them become spread like. Scrap sides as needed.
- After about 5 minutes add the coconut butter, cinnamon, and salt.
- Process until smooth.
Almond butter is a delicious substitute for peanut butter. Nut butters in general are so easy to make in a food processor. Versatile too, add-ins are endless; white chocolate, dark chocolate, honey, whatever floats your boat.
