A BLT

A as in avocado. Thanks to Lynn at The Actor’s Diet for her suggestion on a new way to put my basil oil to use.  I had some purple onion bulbs to use up; I mixed them with avocado, and the basil oil and smashed it all together.  It was a delicious replacement for the mayo on our BLT’s.

Using the onions was a bonus too.  Going into tomorrow’s CSA pickup I only have a small cabbage head and a yellow cucumber to spare.  First time in awhile I’ve managed to stay ahead of the vegetables without having to do some major preservation.  I’m excited to see what Farmer Dan has for me tomorrow, it never gets old.
