    I always love these recaps Jacky! Okay, so I made your ricotta pancakes with the cottage cheese this morning – you weren’t kidding these were thin! I did add 2 tablespoons of sugar to the batter though, because my boss likes sweet, and added in blueberries. Because they were so thin I ended up adding a slice of deli ham on top, then rolling it like a cigar – so good! Thanks Jacky!

      Yep. crazy thin. Great idea, sounds delicious! Glad you like the recipe. Next time I am going to make a blueberry compote and put it on top, I was just too lazy to go back to the store this time around.
