Cauliflower. It’s what’s for dinner.

Steak again!  Totally stole this cauliflower steak idea from Lynn at the Actor’s Diet.  I thought it was a genius way to serve cauliflower.  I added in my own genius using it as a tool to eat massive amounts of Romesco Sauce.

Seriously I can not get enough of Romesco sauce.  Or of roasted cauliflower.  The two put together is dangerous.  Somehow I don’t think a head of cauliflower constitutes one serving, but that totally happened.

I seasoned the cauliflower slices lightly with oil, salt and pepper and roasted at 400° for 40 minutes.  I prefer mine well done with crispy edges.

Cauliflower Steak with Romesco Sauce

The roasting gives the cauliflower a meaty flavor.  The sauce is tangy and rich from the bread, oil, almonds.  This was a satisfying meal all by itself.  Beef what?  Cauliflower. It’s what’s for dinner!

      Wow, now that’s one stunning presentation! I’ve heard of cauliflower steaks before, but I’ve never made them myself. Looks like it’s high time I did!

      I’ve never heard of Romesco sauce before. It looks amazing, especially with that cauliflower. Yum.

      I’m going to try your version – I’ve roasted it before, but never on that high of heat – I would love the charred edges too!
