Pasta With Sausage, White Beans, Spinach and Tomato

Pasta With Sausage, White Beans, Spinach and Tomato

1 lb. pasta of choice (Campanelle is my fav)

1 packages fresh spinach
1 lb. bulk Italian sausage
4 garlic cloves, minced
2 t. Italian seasonings 
1/2 C. dry red wine
1 can petite diced tomatoes
crushed red pepper flakes

1/2 C. coarsely grated Asiago cheese, plus extra for topping
salt and pepper

Begin large pot of water to boil with salt to taste.

Add pasta and cook until al dente. 

Add spinach, cook until spinach is cooked, 2 to 3 minutes.
 

Reserve 1/2 cup of pasta water, drain pasta and return it to the pot.

Heat a separate skillet, medium-high heat.

Brown sausage, break apart.

Add garlic and herbs, sauté about 1 to 2 minutes.

Add wine, simmer to reduce slightly.

Add tomatoes and beans, simmer about 10 minutes.

Combine with paste and spinach, add reserve pasta water and cheese. 

salt and pepper to taste.  Sitr in crushed red pepper.

Serve with extra Asiago on the side.

This is really a complete meal in a bowl complete with protein and vegetables.   It is versatile too, swap out your favorite pasta and cheese of choice, make it spicy or not.  You have to open a bottle a red to make it, so it makes the perfect accompaniment.
